broccoli cheddar soup fail
So if you read my last post about skincare then you know that i am sort of new to this fitness thing..well this week i did my first meal plan and last night broccoli cheddar soup was on the menu. sounds delish right?! well, if you've had it before and it was made right then you know how good it taste. however, that was not the case last night.
i found a simple 5-ingredient recipe on pinterest and tried. it was a fail and that is a bit of an understatement. i really don't know what happened or what went wrong! i followed the directions exactly how i found it on pinterest but it just wasn't right. it turned out to be broccoli tiny cheeseballs soup..the texture was completely wrong! here's the ingredients and what i did:
2 cups broccoli florets, fresh or frozen
1 white onion, diced, small (about 1 cup)
3 cups chicken or vegetable stock (i used vegetable..it's more healthy)
1(15 oz) can of evaporated milk
2 cups of sharp cheddar cheese
put all 5 ingredients in a sauce pan and slowly bring to a simmer (not boil) and cook until onions are soft.
where i went wrong i have no clue! and this was supposed to be leftovers for tonight and since i didn't plan for this recipe to go wrong, i don't have a backup for dinner tonight so sandwiches it is!
