Tried a new recipe this morning before hitting the gym and it turned out awesome! the pic above is of egg-white muffins. i also put a sprinkle of hot sauce for taste but you can add whatever you like.
recipe:
1 red bellpepper
2 roma tomatoes
green onions,chopped
6 whole eggs plus 4 cups of egg-whites
-chop the veggies, then mix them together in a bowl.
-whisk whole eggs and egg-whites together in another bowl.
-line your muffin tins with cupcake holders and spray with PAM. if you don't have lines you can directly spray pam onto the tin.
-fill your cups with a tablespoon of egg mixture.
-add your veggies.
-fill to the top with the rest of your eggs.
-pop in the oven at 375 degrees for 20-30min or until firm on top.
You can pretty much fill these with any veggies you like. i used red/ green bellpeppers and green onions. Also, how many eggs and egg-whites you use depends on how many muffins you want to make!
